DUTIES and RESPONSIBILITIES:

This position trains the inmate workers in all aspects of commercial cook-chill processes and enforces facility security and safety procedures while performing these duties. It supervises the preparation of all ingredients and is responsible for the order in which they are produced while using the master menu and standardized recipes, production sheets, weights, and measures to ensure consistent quality of food preparation. Aids in screening and interviews prospective inmates to make sure they meet the required program qualifications.

POSITION SPECIFIC INFORMATION:

Must be able to function in the stressful environment as high stress situations may occur with staff, inmates, and time deadlines. There is constant exposure to high noise levels, considerable standing and walking on cement floors, and exposure to frequent temperature extremes. Must have the ability to constantly deal with changing priorities, technology, and demanding critical deadlines. Performs related work duties as assigned by the Assistant Food Factory Director, Food Factory Director or floor supervisors. Compiles and maintains daily production records, production reports, times and temperatures. Trains inmate workers to adhere to the Food Service Hazard Analysis Critical Control Point (HACCP) Plan.


Qualifications:


MINIMUM QUALIFICATIONS:

The above knowledge, skills and abilities are typically acquired through a combination of education and experience equivalent to graduation from High School or a GED. Successful completion of a vocational training program in food service operation/cooking and/or 3 years institutional or commercial cooking. Successful completion of Servsafe during the first six month probationary period. Successful completion of Better Processing School in the first year. Strong management ability is needed to deal effectively and professionally with inmates.
